We did exactly that on our Global Expedition. Took out the 40 of the 60/40 back seat. Made a base and mounted the Engel back there. The base became a storage area and location for the safe. I could reach back there when co driver was driving and grab a cold water when outside was 120 degrees...
We never used drawers on our expeditions. I put in a flat floor (piece of plywood) between the wheel well of the Defender then underneath we had Zarges boxes that fit perfectly. It meant that I could pull out a box with all the cooking gear etc take out what I needed and use the box to sit on...
We drove a Diesel 200 Tdi Land Rover over the Himalayas. Spent a month at 16000' and apart from a bit of unburnt Diesel (ie White Smoke) we had no issues. We kept it stock and didnt mess.Did just fine. I'd leave well alone if thats your only reason for adding the Turbo.

I agree with Shogun, I've used the Sleep System from Wiggys for getting on 15 years. It the only one that sets realistic temperature ratings. The Summer bag is great - used it over the weekend at Expo and add it to the winter bag and you get an Arctic rated bag. Insane!
What are you waiting for...
congratulation Matt - thats a great vehicle. As noted above I would put in a Plywood floor (I have the dimensions of the CT ones) and bolt all your "mods" to that. You can also add drawers that way as well.
