Finally, after months of searching, I picked up a 2009 Trek 6000. I love this bike! It's fairly lightweight, which is key since I keep it inside my second story condo. I thought that for the money, this was one of the best outfitted bikes on the market. I was also considering the Specialized Rockhopper, but (I know this probably seems so trivial) I didn't like the routing of the cables on the bottom of the frame.
If anyone is looking for a good hardtail for around $800, this is definitely one to consider.
