That's a common setup. I have 255/85/16s mounted on 7.5" rims and haven't had any problems.

Looking at the specs for a BFG M/T in that size, its recommended rim size is 6.5" to 8" wide, so you're fine.

You'll be fine. I've been running 255s on 8 inch rims for a while, with a range from 10-60 psi. No bead issues.
