What kind of Ice-Packs have you guys had success with?

I just did a 4-day trip with my Coleman XTreme (using ice cubes), and on the 3rd day it was slushy. By the 4th day it was pretty much just cold water. The days weren't TOO hot. I think it did get over 90* on the 2nd and 3rd days.

Are ice packs better than ice cubes? There has to be a better solution that dumping in bags of ice.

5 day coolers

IMHO, use the better 5 or 6 day coolers. A bit better insulation. Of course use all the mentioned tips.

I personally use and know of others that have had great success in using these cooler covers. http://www.offroadtrailtools.com/shop/index.php?l=product_list&c=17

Yes, I'm involved in the product. I've also seen first hand the benefits of using this cover. We have some test data (not white coat testing) that we would be happy to share with you. E-mail me (or click the link and see the pdf) and we'll send you the PDF.

Cubes are pretty much the worst thing you can use. At minimum use block ice, but my favorite method is to freeze plastic bottles and use them in the cooler, no mess and you end up with more drinking water.
