Aftermarket Thermostat Options

What kind of aftermarket thermostat options are out there for use in a DiscoII? I'm not really liking the set up they have from the factory or how hot they run. I remember someone doing something different a while back with a 160 or 180 thermostat but can't seem to find it now.

Anyways, what can be done?

How did you route the wires from the lights on the roof?

I've got an '04 as well.
