Or would i be better to just get a couple of wheel adaptors? The stock pattern is 5 on 5.5 right?

A rough, eyeball, measurement shows 57".

Given workable offset/backspacing, I would use adapters. Easy, strong, cheap, and reversable. Calculate the width by keeping the tire in the stock position.

I use wheeladapter.com

Hi. I'm gettng ready to buy a new wider axle and will order with the Toyota pattern. So I will need to sell the adapters that I currently have which I think are the exact bolt pattern adapters you are looking for. They have only seen one trip of a few hundred miles and I'll sell them for half price. Pm if you're interested.

M416 - 58 3/4 from drum face to face. 2.28" tube diameter, 1.59" spindle diameter. 5 on 5.5 bolt pattern, 16x4.5" rims

M416A1 - 61.62" from drum face to face. 2.28" tube diameter, 1.06" inner spindle diameter, 1.38 outer diameter. 5 on 5.5 bolt pattern, 16x4.5" rims

I just got finished rebuilding my M416 so I have all of this, plus I changed my axle to an electric brake 6 on 5.5 to fit my toyota rims. the cost was the same as just buying some replacement drums to make the 5on5.5 to 6on 5.5 swap.
