Christmas dinner suggestions

Ok gents, the girlfriend and I are spending our Christmas camping. While we have our sides planned (Asparagus and Mashed Potatoes), we are a little at odds on what to cook for roast beast! So please let's hear some suggestions. But keep in mind we would like do something a little more than just steak.

We will be cooking on a propane fueled Coleman grill. It's has one burner and an actual grill top, for reference.

A nice two rib standing rib roast would give each of you a nice piece of prime rib and since it is served med rare, wouldn't take forever to cook. Properly seasoned ahead of time and using a meat thermometer will assure a great meal.

I would suggest Filet Mignon Au Poivre. Coat some nice and not too thick filets well ahead of time in coarse black pepper and a lot of Kosher salt. Pan fry on medium heat. Preferably in a small bit of peanut oil.

You could also do surf/turf by doing some nice cleaned, peeled, deveined shrimp. Use a separate pan. Start by heating a squeeze of peanut oil in a clean skillet. Add garlic, ginger, spicy peppers sliced, or whatever you like. Once done, remove the veggies and sauce by dumping into a bowl. Then, quickly fry the shrimp on both sides in a few more dabs of oil. Return the ginger/peppers. Stir around for a minute. Reduce heat and add as much butter as you like. A shot of Sriracha goes great as well. This makes for an excellent appetizer or side. It can also be the main dish... goes great over brown rice... it's kind of like shrimp scampi in a pan...
