Flip-Pac camper for family of 3 = Fullsize?

Hey all. Looking for a little input into my nascent expo/camper vehicle build up.

Due to a variety of criteria too numerous to detail here, I had settled for a long while on doing an Astro Pop-top van very much like that of T.Low here on the forum. However I'm trying to explore all angles and there are a few aspects of the overlanding ability of the Astro platform that have me a bit worried.

So here's my question: I need seating for 3+ people. If I want to use a flip-pac shell on such a truck, am I pretty much looking at Fullsize trucks?

The so-called "extended" or "access" cabs on most small trucks look like the rear area is best suited for a dog, given that most only have fold-down jump seats. Full-blown 4-door cabs seem only to manifest on fullsize trucks, or the very newest (and thus most expensive) of what used to be compact trucks that have ballooned into at least mid-size in recent years. The flip side is that most fullsize trucks start to look too big for some trails, and hard on the wallet with respect to either purchase price or operating costs due to big thirsty engines.

For now, assume three adults, as the variety of child-seats required by law take up as much or more room as a seated adult, especially the rear-facing installations. My daughter should take up LESS room in a few years when she can just sit in a seat more or less unaided.

So given that, and given that I'm not a "truck guy" (but I can tell you anything you want to know about Subarus), what models and years of trucks should I consider that have at least a passable rear seat for an adult human, either via suicide-type door or full-blown 4-door?

I ran into that myself, very little room in the back of the extended cab mid size trucks, so you end up having to get a 4 door cab which means a bed length less than 5'. I ended up with a full size extended cab and the largest (Brytax) seats fit fine and I get the same gas mileage as the v6 4 door cab mid sized trucks but still have the 6.5' bed.

I saw a setup some time ago that used suspension seats (Beard/Mastercraft) in an extra cab Ranger, the rear seat was centered so the adults legs went inbetween the two front seats, and the lost center console storage went beside the rear seat - very cool setup than maximized room for the single rear passenger
