Hey, so I have a 1999 Gen 2.5, 3.0L swb Pajero that doesn't seem to have had air con from the factory though the heater console has a place for a knob to control it, I was wondering if anyone had installed it afterwards, if it was possible and if so how big of a deal it was?

Wow, a ton of work. Can be done, would be best to have a donor near by. Not a USA Truck I'd assume.

It could be somewhat easy but presuming you are working with a RHD the parts will not be easy to source in the US. The heater core is ambidextrous but the AC is handed. As such used components would be very hard to source in country.
If you look at the left side firewall there would be a rubber plug. oval in shape, probably just inboard of the aft battery tray if your is so equipped.
This is where the AC passes through the firewall.

Car's LHD but in Europe, but i'll have to look for that rubber plug and if I can find a donor car that has the AC parts I guess. Never messed around with the air conditioning in a car, so I'm not really sure what parts are needed, I always assumed that there was AC in it but the knob was just broken, then when I'd bought a new knob and went to install it, found out the "broken knob" was just a plastic insert or a blank in the control panel and the new knob was useless.

The fact you have LHD is a good thing, the rubber cover on the off side in British terms, the opposite side of the driver.
All the parts can be sourced from a salvage yard except for the pulleys and compressor brackets. Those are engine specific so a bit more scrounging will be needed.
Most of the time the needed wiring is in the harness such that you get the controller and switches when you scrounge parts in a yard.
