Has anyone considered, or actually installed, hydraulic winches both front and rear, utilizing a single power source?
YEP. I've done 3 trucks that way. All used 12,000 lb Cut Snake winches which come with an electric pump. Worked really well .....only a little slow but otherwise no problem. Seemed to bypass oil rather than pull too much current if really loaded.
The guy doesn't make them anymore.....shame.
And of course you would only use one source..........why would you use 2? The valving is easy enough...not cheap but cheaper than another pump and PTO mount/drive.

The pump at the top is for the winches along with the 2 smaller valve bodies . The same pump also powers the hydraulic spare wheel and trailbike rack. The big pump and manifold with the 8 lines coming from it in the middle was for a hydraulic levelling / jacking system.

See the little quick connect oil couplings........had planned to make a hydraulic HiLift but never got around to it....one day.
