Those are great trucks and finding a nice clean example is getting harder and harder. Lots of great suspension options for them to make them very capable off road.

An extended cab, short bed would be right up my alley I think.

Similarly, Ive always wanted an extended cab long bed 1-ton Powerstroke.
For the same reasons you mentioned about the cab.

They were never made this way.

Of I were to build one, it would be an extended cab short bed with about 2 feet taken out of the middle.

There were a few f250 short bed extended cab trucks made in 96 and 97, but it is pretty hard to find one these days. To get that configuration you will most likely need to buy an F150 and upgrade it or make one. I love my crew cab short bed and you would be surprised how capable they can be on the trail!

Even though I have a TTB AND an E4OD I love my truck most days. Hard to beat for an older, simple rig.
