Laying out a 4x8 to be a temporary camping trailer. Kitchen ideas? Othe thoughts?

My dad has a 4x8 galvanized steel snow-bear snowmobile trailer. It's pretty heavy duty, has removable sides, and I'm eyeing it as the solution to go camping with my family of 4 in my Wrangler Unlimited. The only problem is we actually use the trailer quite regularly so I'm thinking of some modular items that can be loaded in for a trip and stored in a shed when not needed.

The big obvious stuff to load is the cooler(s), camp chairs, ez-up awning (maybe replace with screen enclosure), water containers, some action packers with food and supplies.

I'm thinking about some kind of portable kitchen box that would let me set up the coleman stove or weber Q100 grill on top and keep the propane cans and eating stuff inside. Then I can stand and cook if there's no picnic table.

I would need some kind of tarp/cover than can be tied down over the top to keep the rain out.

Might I suggest removable/extendable poles to attach a tarp/dining fly
Maybe more of a patrol/chuck box design (without the need for legs) for kitchen items

I had similar needs and went with a Dosko campmate and REI pack-n-prep http://www.rei.com/product/895599/rei-camp-pack-n-prep-tote-table-special-buy

It would be nice to have a dedicated kitchen set-up with partner stove, slides, etc., but I need the space they would take up if permanently/semi-permanently mounted.
(Plus that is a significant investment that I couldn't get past the CFO.)
