For the inside I am wanting something like the first two pictures and the top to open up with a rainproof guard similar to the 3rd picture.

For the back end of the trailer I want it to be similar to the following pictures, with the left swinging gate to be for drinkable water and the right swinging gate to be for a spare tire:

I want a smoker/wood burning stove to hang on the left swinging gate and I want a cooking surface on the right swinging gate, with a cutting board surface (HDPE board) to cover the entire surface of the tailgate.

Anyone have any thoughts or suggestions or other neat ideas for this build?

I doubt you lost much weight with what you removed. The bed and running gear are where most of the weight comes from. I have been staring at a 105 for over a year trying to decided if it is worth the effort to do anything with it.

No way would those timbren spindles hold close to the weight.

The issue with these trailers is the narrow frame and axle overhang required to fit wheels in the fenders. I would add up the weight of all the stuff you want to put in it then add the weight of the trailer to pick your axle.

My guess is that you are going to end up going back in with a 7K axle. There are a few builds on SS that are well done with 7K drop axles and removing a few leafs. Not sure I would want a spring over drop axle for an expo trailer; as a pavement trailer it would be fine. Would need to take some more measurements but I don't think and spring under set up with the OEM leafs is doable. Most efficient way to go is probably with a torsion axle. Not sure how much overhang those will tolerate. Should be able to spec the arms to lower the trailer as much as possible/fit the wheels into the fenders.

Just keeping the frame would be a good option as well. Could fine tune the track width and build your own box. My guess is the bed alone is prob 1K lbs.

Its a shame the tongue was messed with. I think the original tongue would be prefect with an axle swap. It is like the 416/101A1, so it can be flipped and doesnt have the bulk associated with a surge brake assembly.
