Moved in to the old Lance TC from the Roadtrek

My job is 130 miles from my home. I've been living out of a camper for several years, during my work week. I had dreams of converting my 92 Dodge Roadtrek to 4x4, but after living in it for year I realized the bed was just a bit too small. I gave up on that idea and a Sportsmobile is way beyond my budget.
I'm now driving a 04 GMC 3500 Duramax 4x4 with a 97' Lance Squire camper. The extended overhead is awesome, almost like my bed at home. But, I'm really disappointed in the design of the kitchen. Comparing Roadtrek's use of space to the Lance, the Lance is horrible. How can something so big have much less usable space?
I'm considering rebuilding the kitchen to include a real silverware drawer, a pantry and room for a microwave (that doesn't sacrifice a cabinet).
Another thing that is missing is a decent closet...solving that issue will be the hardest..
Anybody done a re model?
