MX mushroom cheese fondue?

Hi all,

About six years ago my wife and I stayed at Costa Azul, about an hour north of Puerto Vallarta, MX. They served this great appetizer. It was melted cheese (Chihuahua cheese, IIRC) with mushrooms, eaten on tortillas.

Seems like something that would be really easy to do at home, but we haven’t found a cheese that melts well and tastes right. Actually, we haven’t been able to find Chihuahua cheese, at all. We’ve tried a couple of ‘Quesadilla’ cheeses, but even they don’t melt real smooth and don’t have the right taste.

Any suggestions?

You might want to try Monterrey Jack as a substitute for Chihuahua cheese. It will be less tangy, so you could add in a little goat cheese to make it tangier. Google queso fundido; there's a bunch of recipes on the net.
