Need Florida flyfishing "DIY" advice...

I am heading to FL next week for some conferences but will have about a week in which I am planning to drive from Orlando along the east coast to Key West...
The only plans I have are two nights in Bahia Honda State Park on the Keys...
I would appreciate any advice for any areas to fish...saltwater preferably...I will only be able to bring one rod with me...was thinking a 7 or 8 wt?...
I am going to try to avoid the guides on this trip...any other waters/areas I should look into?

If it's one rod a 9 ft 8 wt should do fine. If you can carry an extra spool or two you could load one with 9wt, weight forward for heavier stuff and another with 7 wt for bass. In the Ft Lauderdale-Miami area there are tons of road-side canals that hold big peacock bass that would be fun. Get below there you can got out an stalk the flats.
