Thanks for the video. In non-production settings, these "sheet nuts" are usually installed with a hand plier tool that's similar to using a pop rivet gun. I'd never seen an adapter for a drill. Looks like it might work well, though the loss of "feel" might be a bother in some situations.
Anyway, they work as advertised, but it's all a bit fiddley, and you must have a precise-diameter hole for each different size, so you don't just grab a likely-looking nutsert/rivnut out of the box and have at it. You might, in fact, have to drill out your existing holes to a specific size. You also need enough clearance to lever the tool closed.
The other issue is that the nutserts themselves they are a little pricey--$0.30 each for small ones, more for bigger--especially compared to sheet metal screws. But good old Harbor Freight has a $17 kit with the tool and a small assortment of inserts, so I suspect it'd be relatively easy to test out your plan.
