The Fall 1008 issue of Overland Journal is debuting an Overland Chef section - recipes for great food and tips on gear, storage, and provisioning for long and short trips.
What we'll try to do is feature one recipe and maybe a new piece of equipment, and then offer the full menu on our website blog. In Fall, I tried the GSI pressure cooker. Now I'm hooked on pressure cooking!
We'll be hoping that all you overland chefs out there will contribute ideas, tips, and recipes.
Fall 2008 featured this menu:
Starters & Drinks ~ Spiced Nuts and Dried Fruit, Dawas for sipping
Dinner ~ Chicken en Adobo with Tropical Lentil Salad, Grilled Zucchini and Green Chile
Wine Pairing ~ For white, a soave or vernaccia di gimignano; for red, a rioja
Dessert ~ Grilled Mango with Honey
Equipment for this menu: Two-burner stove (one-burner will work as well); pressure cooker (I use the GSI 3.5-quart hard-anodized model, only 4 pounds, is compact, and cleans up easily); grill for campfire
