Until I was into my 20s I hunted Pheasant every Halloween at some of the best corn fields the US offers in Nebraska. I suggest pulled-meat, either baked or pan-fried with olive oil, lots of sage and a little rosemary. At the very end of pan-frying, add a touch of honey to crystalize on the meat. Sage is key.

Too bad there aren't many Pheasants in Nebraska today! They have gone the way of Sharp Tail Grouse and Prairie Chickens in Nebraska: GONE! Grew up there and have great memories hunting allover the state particularly the Sandhills.

We used to either either braze or stew the legs and thighs...and we would fry the breasts just like chicken breasts: Wonderful after a good soak in buttermilk!

Our haunt was near Grant, NE. We used to limit in the first few minutes. As the years went on, I'd maybe pull one in a whole weekend.

Them sage chickens ain't too bad either, but fit more IMO on a good Wyoming mountain camp vs. a corn field walk. ``You can live off it, but it tastes like...''

Sorry just saw this thread. Here's a couple of ideas.

I have been putting the birds in a crock pot or pressure cooker then deboning when cooked. I get to use the whole bird then. From that I make: a white chili w/ northern beans, onions, green salsa and season to taste, soup w/ mushrooms, wild rice carrots celery. Note on these soups add anything else that sounds good.

You can stuff the bird with apples, onions and brown rice, put it in a brown and serve bag and roast. These can be used with any game bird. Also check any cook book with recipes for fowl and substitute chicken.

It should be illegal to use a can of cream of mushroom soup. -Brad
