Tamales

Just wondering if many have looked at various centuries old native american pre-refrigeration trail food to do trekking service, corn husk or banana leaf wrapped tamales come to mind, great for breakfast, lunch or supper. :)

If I was omnipotent and could eat anything I wanted for the rest of eternity, it would be the tamale. Largely unchanged for centuries, and for good reason.

Unfortunately, they are a complete PITA to make, at least to make properly.

But hell, if I'm omnipotent, I'll just enslave a small army of cooks to keep me well supplied.

It's good to be the king.

Mmmm ... Tamales. Big tamales, Small tamales, Chicken tamales, Shrimp tamales, Veggies tamales, Sweet corn tamales ...

Tamales are one of our staples when camping. We just take them frozen and then as you said, they can be eaten any time. Breakfast is my favorite time for them. Just throw them on the grill and you're good to go!

Never really thought of them for camping. Will have to try them out next time. I really should thoroughly test them thoroughly at home prior to any actual field trials:drool:

Yep, D and I are big fans of tamales. I just had a couple for lunch yesterday at a favorite little Mexican restaurant in P'cott Valley.

We do take them with us on camping trips. Since they are labor-intensive to produce we prepare many in advance, vacuum-pack them in pairs, and freeze them. Then, they are relatively easy to heat in camp. I've occasionally placed them in our "manifold oven" and had them ready en route.

[Note: We pulled off a dirt road into a BLM 'dispersed camping site' last year, and while we were deciding which way to swing 'Harry' another vehicle stopped to ask a question. As he was in the middle of his question he sniffed the air and said, "Smells like there's a kitchen nearby." I confessed to the presence of a quick supper, and you could just see his salivary glands working. Unfortunately, I had placed only two tamales to heat, and we have our limits when it comes to hospitality—especially when it comes to our tamales.]

I agree. We buy frozen ones. Walmart actually sells frozen ones that are quite good. My favorite place to buy them is at this little mom and pop place up in Hartsel CO. I highly recommend it to anyone who finds themselves passing through there. Can't miss it since there are only like 3 or 4 buildings in town! Just look for the bright blue one that is part building and part semi trailer!

I make Tamales and they are labor intensive, however since I like my pork and red chile hot and spicy I make them to my taste and they always turn out to be very good, I should bring next time more then a couple of dozen to our next camp trip!:rockon:
 
Home made tamales...

I've found using a tortilla press makes the process MUCH faster. Don't press the masa as thin as for tortillas, use wax paper and 2 people. My wife and I can make 2 dozen tamales in a half hour.....

With the fillings ready to go of course!!

Well I found the local tamale king in Calgary. Aside from having a roaring tortilla business he sells full meal deal like mama makes in Mexico, meat with vegetables wrapped in corn husk tamales twice a week for local sale, but for folks who need a large amount for a trip he'd like a couple of days notice.
