IMO you dont even have to pack lightly with a 2 door. I have a TJ which i think is even smaller than a JK? Anyway I have been camping solo and with a second person. I fit: 2 jerry cans, big tent, two stretchers, two deck chairs, two inflatable mattresses, a table, stove, two sleeping bags and an esky in the back. It was piled pretty high but it fit. With some smaller gear and without the stretchers plus the jerry cans out the back there would be plenty of room for two of you with gear.

Here it is, looking forward to many new adventures!

WOW! Beautiful!... Just beautiful.

The posts from all the guys on this thread has been awesome and enlightening.
One of the "themes" I've read a lot on this forum, is think like a backpacker, and then expand as needed.
I really like that idea, and is what I'm doing as I prep to go exploring (just need to make the time to get past the edge of the driveway).
I added a Yakima rack to the hard top, and have a Rocket box. Figure to toss the bulky-but-light stuff up top (max at about 150lbs including rack and box). Packed like Omar, that would give room to keep the 4 seats available, or have room for the two "Super-Mutts".

Will look forward to trip reports with pictures of this great country!

I really learned a lot from this thread, I learned I don't know crap about packing, despite all of the deployments I have gone on. I am hoping to overcome some of my medical issues to get further from the Jeep, but I'm happy I have a Jeep to take me further.
