What tire / wheel setup is this?

USA6x6 is an option, but wouldn't I be better off going with a 19.5" or 22.5" wheel. I think I'll have more options than using a 20"???

Ideal would be 22.5" wheel, with a 37"x12.50 tire

Also, do I keep the dually style bed or do I have to switch to a SRW bed?
 
A 20" wheel would give you 335/80R20 (40.7", 5100 lb) or 365/80R20 (43.1", 7100 lb).
With a 22.5 the only offroad treads are too big for a F450 - axle breakers - 13R22.5 (45"), 425/65R22.5 (45"), 445/65R22.5 (46").

For the F450 axles, particularly the front Dana 60, the 335/80R20 is the safe limit. I have thought about this a lot.

20inch is not too bad of a size, tires are easy to come by, basically you are looking at the same size tires as a Unimog, like charlie said I would not go above 335/80R20 as they start to get very heavy the ford is going to start having axle problems as well as brake and unsprung weight problems.

There are lots of tires available, such as Conti MPT80,MPT81, Mich XL, ZXL, XM27, XM47 etc. Most tires in this size are only DOT legal to around 60mph, a couple of them 70mph, if you need to drive faster than that these may not be for you. Like I said above, with tires this heavy at 70mph your suspension better be ready for a beating, the same goes for driving on washboard.
