Wicked good dipping sauce

So, we recently took a day trip & ate at 2 places that were on Diners Drive-ins & Dives. One in the morning & one at night.

I liked the one so much, I tried to duplicate it. Turned out excellent IMHO & my kids thought so too.

I made a big batch.

What you need:

1-1qt bottle of Olive oil---you will only use 1/2 of it. I did not use E-Virgin oil because i did not want the olive oil to be overpowering.
2 Garlic bulbs, stripped, peeled & cut as thin as you can.
1-onion finely minced
2-Roma tomatoes
2 small reg tomatoes, still on the vine
1 can of crushed tomatoes
1 can of diced tomatoes
1 jar of Fracesco Rinaldi sweet & tasty tomato sauce
Hot pepper powder---i grow & make my own but you can easily make your own by putting crushed red pepper flakes in a Vita-Mix or Ninja blender & turn it to powder.

I poured 1/2 the olive oil in a pot. Got it nice & hot. Put the thinly sliced garlic in, onion in, hot pepper powder in & cooked it till nice & soft, then added the 2 cans of tomatoes listed. Took half out & put it into my blender & pureed it. Put back in pot. Added the 2 de-skinned Roma & 2 small tomatoes. Added 1 pack of splenda. Cooked it awhile & done.

This is simply a guideline. You can substitute whatever you want. We bought a nice loaf of Italian bread & cut into 2-3" squares for dipping. Serve sauce hot. Man this stuff is good.
Beats chips & dip anyday IMHO. Enjoy.
