Having lived full time more than 5 years my first thought is 100 Watts is no where near enough. How much roof space do you have? Can you fit a 315Watt panel, or two?

Pvc is a particularly nasty plastic and should be avoided whenever possible. A "soft" box will be difficult to insulate and install doors and windows. It will offer all the security of a tent.

The problem with UV is the water must be clear for it to work, any particles in the water protect pathogens from the light. Filters for getting that level of clarity will clog and need to be changed regularly. Putting gray water through the system will clog the filters even faster.
We carry two spares but we tend to go to some extremely remote places. For most people, especially in the US, one spare with a compressor should be enough. If you get a puncture, that's it, turn around and get back to asphalt.
