So you sort of have a Currie Anti-rock. How does the diameter of that bar compare to the stock bar? Did you ever have the stock bar rigged up with the SAS? How is the "anti-rock" on the road? How does it compare offroad to not having a bar at all?

I would seriously doubt the snorkel would have any effect on the MAF. The engine can't take in any more air than the throttle plate will allow. My Explorer has a MAF and I also run an 80-series snorkel and the only thing it's done is keep my filter significantly cleaner.
These tires have very swallow siping and it won't be long before your tires look like racing slicks with a couple jagged grooves running around them. I'd stay away.
For the occasional use like you seem to indicate, the cost of an ARB will be steep with little benefit if you aren't pushing the limits a lot.

When you come to CO, the higher mountain passes and areas are still 1-2 maybe even 3 months away from being passable. We just got a huge snowstorm that dumped over 40" in some places.
