    The roll bars might save you, but the rest of the RV will be destroyed. I know that's the point, but really, if you think you might get into a situation where you might need roll bars, then a traditional RV is not for you.

    The main thing I wish I had is about 4 more inches of ground clearance. I'm not willing to take my home too far off the beaten path. Not worth the hassle of damage. With more clearance I would feel better going to a few more places than I already do. But overall, forest roads are fine for me.

    Born Free made a nice coach, they went out of business some years back. You might look at Bigfoot class C's. They made a 24 foot model, and even could get them with 4x4 added. Not easy to find and they don't do class C's anymore.

    This was on my old van when I bought it. You could remove it and put it on the rear hitch, but I didn't have longer wiring to make it back there. Never used it so not sure how well it was on there.

    I've been using a Verizon hot spot for 12 years now. It has been fine in 99% of the places I stay. I don't have a need for a booster as I'm usually near enough to cell towers.

    Kawasaki Super Sherpa. Not the easiest to find, but air cooled, has a carb and is extremely reliable. 250 cc, which is enough to do what you want, street legal and can be had for about $2500. Always my top choice, but Honda, Yamaha and Suzuki all make something similar.
