How about baking the potatoes ahead of time? Then reheat and mash and add whatever you like to them in camp? I've done stacked Dutch ovens when doing camping holiday meals and it worked out great.

I also use the Kelty Litter G'tter, and have a larger dry bag that I can use if I have to hang onto stinky stuff for a few days.

I was doing brakes and discs on mine, yesterday. The rear was easy peasy, but those 21mm caliper bracket bolts on the front are STUCK.

I store mine the same way. My vehicle doesn't fit in the garage, so I still have to mountand remove the old fashion way, but at least this gets the tent out of my way when not being used.

On my '98, the reservoir has a removable filter basket in the top.

How does the Red compare to the Gold? Maxim Gold is what I always buy in the big boxes to have on hand for backpacking. Anything else, I use my Aeropress.
