2002 Tundra suspension options

I have been looking around this site for awhile and am finally getting around to posting. There are some really nice trucks here and I am very jealous. I have a 2002 Toyota Tundra V8 Access cab TRD 4x4 with 50,000 miles I have owned since new (got deployed to Iraq, hence the low miles). I was going to get a new truck, but really don't want to spend the $20,000+ on a new vehicle and I own this so insurance is cheap and no car payment is nice. It is stock with the exception of an Amsoil bypass filter and a set of FJ Cruiser steel wheels. I am going to get an ARB Sahara bar and want to lift the truck no more than 2". The 265/70-17's have been a decent size for me and will eventually go to a more aggressive tire in that size. So I am trying to decide how to get there. There are the Bilstein leveling shocks, the Bilstein coil overs BTS-7514, IVD Coilovers, or the OME shocks (mixing shocks and springs from various years) from the Tacoma I have seen people running and will probably do the tubular upper a-arms. I am leaning towards Bilstein coil overs because they are half the price of the IVD's (Donahoes), but am concerned they aren't very good and won't support the Sahara bar. I also like OME stuff, but they aren't actually made for my vehicle and I won't be able to adjust the height. Will get custom rear leafs at some point too. Basically looking to make my vehicle more sutable for light four wheeling (fire roads etc.) and highway travel while loaded with camping equipment, dirt bikes, scuba gear etc. Price isn't really a limiting factor, but if I can get the same result for less, I am all for it. I hope this makes some sense and any info would be great.

First...Welcome to the Portal!

Second, I'm sure you'll get lots of advice on every subject you ask about.

The Bilsteins are good, we put a set on Haggis' truck and other than finding a spring compressor capable enough, it was easy and inexpensive. I do not see any reason they would not support a bumper/winch combo. If you decide to adjust the height later, you'll of course have to take out the coilovers and compress the springs again.

The IVDs offer absolute control in adjustability, again easy to install and easy to adjust on the truck. You can cheat a bit by checking Tundrasolutions, someone is usually selling a set for about half price. I don't know how the new ones ride, but if the old Donahoe versions are similar, you'll like them.

I am actually leaning towards the OME N91S struts and 885 coils. I am thinking the less to adjust the better?
