Bulk Heads (Advantages and Disadvantages)

For security and stealth in converting a Sprinter into an RV, I'm potentially considering purchasing a 144 in., high top with bulkhead. To me, its seems that the security aspect of doing this is obvious?

At the same time, I'm certain that there are disadvantages?

The driver and passenger probably wouldn't swivel, for example, to accommodate a small dining area? With some vans, the bulkheads impede tall drivers- I am 6'1"- from reclining the seat fully.

What are any other downsides?

As for stealth, I assume that a bulkhead would add to the construction stealth motif, if the van is windowless and no one can see into it?

Relatedly, for entrance into the cab area or general construction, are some bulkheads built better than others?

Finally, has anyone constructed their own custom "divider" made from wood or other material?
