Deep sea fishing ... What do I need to know for a boat charter off of Cape Cod?

I've been trying to go deep sea fishing off of cape cod for a few years now but something always comes up.

So I'm interested in chartering a boat for 3-5 guys for the day but not sure what type of fish we should be going out for. None of us have done the deep sea fishing thing before but would like to come home with fish, not just sport fishing.

Anyone familiar with deep sea fishing scene off the cape?

I have only been off of ME a few times...
We caught a lot of mackerel, a couple nice cod, and cleaned a few lobster pots...

I guess I wanted to know what's fun? Shark? Tuna? Bass? etc, and if I need to do a full day to get a proper feel for a good fishing day.
