I loved the massive thread about people's builds. But a lot of content and my skills are just way too amateur to pick up from a photo.
I did a couple of searches for instructable type step by step so I can build a basic platform to camp this winter. Trying to figure out the best drawer system / kitchen pullout ... is leading me to analysis paralysis.
I found a couple of basic systems with guides. I was only looking for pickup truck bed ones. A short list:

http://www.instructables.com/id/Convert-Your-Truck-into-a-Camper/ Really basic. More of a platform than drawers. although I have seen someone attach ropes to a rubbermaid container and slide it in the back.

The winner for me for phase 1 I think. I realize the measuring and design complexity is mainly due to the drawers/sliders. This system means rubbermaid containers, but it is simple enough that I can measure once cut twice without it being an act of futility. It also looks easily removable. Thanks @nr13:
