Infotainment upgrade? Apple Carplay and 360 camera into Sprinter

I have a 2016 Sprinter 2500 4x4 cargo, and I’m going to upgrade the infotainment system. I really enjoyed test driving the 2020 model with the 360 camera, so I’m looking to pair a head unit with a 360/birds eye view camera.

Has anyone done something similar? Any recommendations or pitfalls to beware of?
