About 2 years ago I wanted to upgrade some of my side dish options. As a general plan my main course is often a portion of grilled or pan seared chicken, steak or seafood and this is where I tend to spend my time and effort for seasoning/preparation. I have no oven or microwave, and my refrigeration space is also limited. As a result, to add a vegetable or similar side dish I often turned to canned goods. I generally found the typical canned offerings pretty plain and uninspiring.
One day I noticed a selection of canned goods from Margaret Holmes & Glory. They offered an interesting variety of offerings that added some nice dimensions and depth to the typical canned beans & corn.
Over time my fav's are several of the many types of "seasoned" beans.

Another nice option as a quick base for several types of tomato-based dishes, especially with seafood is the canned tomatoes, okra and corn combination.
Example: In a decent sized pot I add some olive oil and cook up some diced onion; then add one of these cans, a can of chicken breast, andouille sausage, and if more than 2 servings needed, I add a can of diced tomato. Add seasonings to taste. I like some red pepper flakes, Italian seasoning, garlic. Simmer all this for a bit, then at the end add shrimp seasoned with Old Bay. When the shrimp are done, served with rice.
A rice note: I've tried some of the precooked bagged rice offerings, such as from Uncle Ben's. Pot cooking rice from scratch just puts too much moisture into our camper. This option is pretty darn good!
