Modern diesel for overland travel?

As my wife and I have started looking for a suitable vehicle, how doable is it to overland internationally (specifically South America and Europe) with a modern diesel engine? I'm referring to the need to put DEF on an ongoing basis so I'm curious if that's even available across countries.

We have seen a van for sale here in the US that has EGR / DPF / DEF deleted. That would make life a lot easier while traveling, although I do realize that deleting the emissions equipment is illegal. That being said, once deleted, can a modern diesel engine run on non ULSD (as I'm reading ULSD isn't always readily available depending on the country)?

ULSD is less desirable and lacks lubricity. A so called modern diesel or deleted diesel will run fine on regular diesel.
