I leave in the Tampa bay area. The small amount of beach camp sites book super quick 6 months in advance during good weather so I hard to get. Our favorite thing to do is to get kayaks and get to small islands between the main coast and intercostal. It's an adventure, but we take our 7 and 5 year old and I highly recommend it!
