Apple just started selling an unlocked version of the iPhone to customers in USA. The unlocked phone will still only work with AT&T's 3G data network in this country (T-Mobile's 3G service uses a different radio frequency), but you can use a different carrier's micro-SIM card for service in many foreign countries.
According to Apple's web page, you need to connect the iPhone to a computer running iTunes to complete the conversion to a different SIM. That's not very convenient while traveling. At least you can now use an iPhone with other SIMs without jailbreaking the phone's operating system.
Update: While T-Mobile's 3G service is not compatible with the radio in the iPhone, it appears that their slower 2G EDGE data service will work wit the unlocked phone.
