A late model F150/F250 I was looking at had plenty of room behind the seats for storage. Seats even reclined enough for a nap.
I’d be 100% content with a regular cab.
Good thing about the Transit is the high roof where you can stand up inside. A friend of mine has an AWD version with high roof and loves it (as do his family members).
I’ve turned more into a soft roader myself. Years of slow rock crawling, it doesn’t interest me anymore. Backcountry desert travel is my current interest. I’d think either of your vehicles (F150 and Expedition) would fit that bill.

I think it would help if you would identify what vehicles are in your possession right now. Hard to recommend based on “truck” “beater” “family hauler” etc.
Also, what type of offroad trails you like to do. For how long?

Personally, I’d opt for a full size SUV. For dogs crated with hunting/fishing gear, that may get tight with a midsize.
Suburban or Sequoia is the way I’d go. Or even a 200-series Land Cruiser.
It’d depends, in my opinion.
ie, I am all for comfort and good amount of amenities to keep the family happy. But I had several new trucks. They were nice and all. The Ecoboost had power for days. Smooth as butter on the freeway. But I didn’t gel with them for some reason.

As much as I love full-size trucks for travel, I’d be very tempted with a 70-series with its superb payload. Alas, we get nothing close to that here.
I had hopes the Ranger SD would make it this way, but no dice.
