It makes plenty of power, I would say somewhere around 300 ft lbs of torque. It's and industrial engine to, it came out of a tractor or commercial truck. No emissions equipment, a bigger clutch and flywheel and supposedly a forged crank. I just idle around town at 1200 rpms I don't really have to shift If I don't want to. I am plenty happy with the engine and interior. Just exterior and chassis work now
That nice my 85 300 I6 had a bigger clutch and bigger flywheel. 1st gear was best used when it was pulling or loaded. The biggest problem was since it was a 85 it was loaded down with emissions crap.

I can't tell if you heated the intake or not, but if you didn't you may want to look into adding some water heat to the intake. It helps a lot with cool weather driveability.
I that about swapping a fuel injected engine and turbo charging it but I decided on staying with simplicity. Manual choke 4 barrel and only 2 vacuum lines. No I didn't heat it but with the manual choke she does pretty well. It cranks for a little while but as soon as the fuel makers it to the cab she fires right up. Rear main leaks but I already replaced it once and I don't want to again
On your Edelbrock carb. You might want to look at blocking off the crossover fuel bowl passage with it in that orientation. That can help immensely with the performance of that unit off highway....and I imagine even on-road with it rotated 90 degrees. There are other tricks you can do too if you find it starts to give you issues off pavement.
