Well I would pick up a couple of those things if I was headed down there again soon!
I had an 86 VW Vanagon Syncro (4x4) several years ago, so I can appreciate the westfalia build. I'd love to start again with a nice syncro westy but they have become so insanely rare and expensive. Lots of good memories in our old van, definitely a fun adventuring vehicle. Good luck on your restoration!

Yeah extra gas would be great... We don't have a rear tire carrier yet so the mounting options back there are limited - and storing it inside the vehicle isn't usually preferred, so I'm trying to figure out where / how to put it on there. Anyone ideas?

On the CB radio, is it worthwhile even if you're planning on being alone most of the time? I was thinking about looking into getting my HAM license and maybe getting a 2m?

Started out with this.

Ditched the trail rack portion of the bracket and now have Dually D1's bolted to fabricated captured nut caps at the top and this bracket holds a 2 gallon Rotopax. 2 gallons will give you an extra 30 miles, i'd take that over walking.
