From a non-US perspective:
Pancake mix is OK for camping, but at home it's homemade batter all the way. It takes something like three minutes to make, and what's the big rush anyway? We're so lucky that we've got friends who keep chickens, so we're making them with fresh non-factory eggs.
I make pancakes without any kind of rising agent. The eggs add a bit of fluff anyway. I think that is the most common way to make them in Norway.
Around here we're knee deep in blueberries every autumn, so we've got home made blueberry jam as well. The kids are usually prefer store bought strawberry jam, though, and sour cream.
I like maple suryp, which over here is somewhat exotic. Well-stocked shops have it, but in tiny little bottles and it costs a small fortune.
Can anyone suggest how to make large batches of pancakes and keep them warm... for such an occasion as an ExPo pancake breakfast sort of deal.
I prefer Ebelskiver's :elkgrin: Of course a special pan is required.

That good taste , but hay to cook them in camp ?
I have trouble at home create smooth equal round thin as paper , but cook in camp with .out stable temperature ....you mast sheer your secret:chef:

Me i ask you hay heavy thick your pan , you did not use cast iron at all ?
The reason why i ask , cast iron have chance keep stable temperature , other way you mast work hard and paid attention watch every second :Wow1:, so blintz do not became to dry or over crispy .

I've been using those for years for camp pancakes. No eggs needed, just add water and shake. They also seem pretty tolerant of outdoor cooking.
I don't end up making from scratch very often, but sometimes there is the addition of cinnamon and ground pecans.
