educate an east coaster on fish tacos

We made these Crab Tacos the other night and they were awesome! The only hard part was cracking all that dungeness crab without eating it all right then.:drool:

I think I will try that tequila/avocado mix tonight, the wife made a big pot of beans yesterday, so that should go perfect with that.

Oh boy, this is a dangerous thread to be reading right before lunch! I may have to run to the grocery store for some fish taco action!

Fried is the way to go. When making them at home, I use a tempura batter for the fish. It holds a crispy texture longer under the sauce. Also use red cabbage, fresh cilantro and lime juice.

Great recipe for the sauce. I'll try it next time.

many, many years ago we use to live on fish tacos when we went to ensenada...for a while we use to stop at p. nuevo for fried lobster-beans-rice-tortas and finish off with tj hot dogs wrapped with bacon at the border.

If you have a Moe's close by, you should be able to pick up some fish tacos there. They may not be the best but they are still better than tacos with ground beef in them. My first try at them was in Hilton Head at Salty Dogs, they were ok. I had some in Carrizozo (sp?) NM while on a MC trip and they were pretty good. I also had some in Big Sur on the same trip and they were good as well, a little fancy but good. Thing is, I don't really care for fish or seafood for that matter but fish tacos are the bomb.

Hmm...in Central Florida...here's how you get 'em.

...Load up the family, significant other, or just your own self and head to the downtown "hispanic" area...most places have 'em...

Then drive around, looking at the open air food stands for one that advertises, usually on poster board in marker...tacos de pescado, tacos de camaron, or "mariscos".

Stop the truck...saunter up to the stools or benches...and repeat after me:

"Quisiera dos tacos de (pescado for fish, camaron for shrimp), y una Coca Cola, por favor."

You maybe asked "Harina o Maiz?"....That's flour or corn tortillas...your choice...

Likely, there will be fresh onion, cilantro, cucumbers and the like sliced up and in a tray....don't be fearful...it's all good!

You'll get to watch the tacos, and likely the tortillas, being made before your eyes!

Baja Taco's

Serves 4 to 6
Note: Must have cold Pacifico within arms reach during prep work.

2 medium sized fillets of fresh Red Snapper
1 1/2 cups Bisquick Mix
1 Pacifico for recipe. 2 for the cook.
Cayenne Pepper
Fresh Ground Sea Salt
Fresh Ground Pepper
2 Limes sliced
1 dozen Corn Tortillas
1/2 onion chopped
1 chopped tomato
chopped Cilantro
chopped cabbage
1 to 2 cups grated sharp chedder cheese

Tangy Mayo Sauce
1/2 cup mayo
3 tablespoons of white vinegar
1 to 2 tablespoons of milk

Add vinegar and milk to mayo. Use fork and stir till smooth and creamy, add more vinegar for an extra tangy flavor.

Arrange cabbage, cilantro, onions, tomato's, cheese, limes and Mayo mix on large serving plate or separate bowls if you prefer.

Cut fish into small pieces, 1 inch or less.
Pre heat tortillas in pan, keep warm or heat as needed.

Mix beer and Bisquick until smooth, adding cayenne, salt, pepper and lime to taste.
Add fish to batter mix and toss or dip each piece individually depending on cooking style.

Heat large pan, add corn oil to a depth of 1/4 to 3/16 deep.

Add fish to hot oil and cook till golden brown and crispy. Squeeze on lime, add cayenne to taste.

Serve fish hot with warm tortillas, condiments and Tangy Mayo Sauce.

I like to use cod, but tilapia or any whiefish will work

I am a batterin guy.

1 cup flour
1 cup mexican beer
garlic powder (1 tsp)
Black pepper to taste


Mix it up, batter the fish and fry.

Cabbage, pico, cilanto, lime for the garnish

all thrown on a corn tortilla. I like to throw my tortillas on the grill for a 45 seconds on each side, just enough to warm them up.

I'd like to commend this forum

and the contributors to this thread for the complete and total lack of jokes regarding fish tacos (not to be confused with bald tacos)! I'll admit that I may be a bit disappointed that not a single good joke crept in, but nonetheless, nice job and thanks for the recipes! :26_7_2:
