The fiancee and I are planning an epic expedition from Toronto to Anchorage this July. We'll be driving through Canada to get there but the plan is to drive home through the northern US states. Maybe we'll cross paths ;)

Sounds like a great trip. We want to do something similar, a trans-Canadian east to PEI, but we're still a year or so away from that. Baja this Summer. You'll have to dip a little lower into the States to cross paths.

If you lift your Gen 3 with springs to 30-40mm above factory height, can you still get the alignment back into factory specs, or will it be way out?

You can get your alignment correct with a 30-40mm lift.
The OME suspension I'm running is right around there.

King's are fine, just not in stock anywhere in the U.S. I made a thread regarding my Ironman lift with some info in it a few months ago.

Are talking about Kingshocks (USA) springs or King spring (Australia)?

As kbahus stated, don't think the Australian springs are distributed in the USA.
However, Kingshocks (USA) springs are top quality from the reports I've gotten.
