Our son has been vegetarian for several years now, and I have made a decision to almost be vegetarian (it's my modified version which will be no mammal meat->fish and birds are okay to start with)
I know it's weird but between red meat, milk (lots of fat and made for baby cows not humans) and HFC I need a change
My son mentioned some bean, onions and long grain rice burgers that can be baked
I can not stand the texture of the "fake" meat and burgers
I have cooked for years, my problem is cooking things I do miss, a "burger" on a bun, "meatballs" for spaghetti with no red meat or fake meat
so what are some options?

Ps we have used spaghetti squash, egg plant and mushrooms all are good and useful
