Awesome. We do have some great anodizing options here in town, I'll hit them up after the holiday.
Using flat aluminum plate you could miter each corner at a 45* angle coming inward with the miter and then have a shop using a large brake bring each side up so you have a beveled edge...then have the little miter slits TIG'd...a relatively easy and affordable way to add a neat edge perimeter to your custom griddle for fat containment if necessary.
Weld on aluminum rod handles and/or feet as you wish. Then off to anodizer.
