Oh and take plenty of snacks, kids complain less when their mouths are full of food.
Amen.

I would not worry about the two oldest as they will likely take to the travelling just fine. The 7 month old may be a bit of a different story. During the course of two trips, we travelled over 10,000 miles across Canada, the US and Baja with our son while he was between the ages of 6 months and 10 months. We have learned a few hard lessons to say the least.

1. Get a comfortable car seat. We added some extra padding to ours during the first trip and got a bigger more comfortable one for the second trip.

2. Try to schedule driving to start right at morning nap time. Take a break in the afternoon to play (no stroller time) and drive again during the afternoon nap.

3. Don't push it. After a long day of driving Leith would kick up a major fuss whenever we put him it his car seat. He knew what was coming and we had pushed him too far. Shorter days are always best.

4. Always have a bug-out plan. If he/she has had enough be prepared to stop and change your plans. No destination is worth the stress, after all it is about the journey with the family.

5. Take only a few toys, Leith was bored of them in no time anyway; but stuff from the trailer or console (kitchen untensils, cell phone, chip bag, plastic bottles) kept him entertained for hours.

Enjoy.
