Are you talking about slow cook BBQ (e.g. overnight with a brisket), or something quicker with a slathering of sauce? Most slow smokers would be too bulky to pack on an overland trip.

I've done some slow smoke BBQ, but since it takes time and equipment I only done it at home.

In camp I don't do much with an open fire, because I don't like the smoke, ash, and potential embers. I've made some use of charcoal, either with a dutch oven, or a folding Pyromid grill.

Of late I've dabbled in Korean style BBQ. Mostly this involves marinating thinly slice meat, and cooking it quickly. It sort of worked on the charcoal grill, except for the sticking. I'm happiest with putting a comal (Mexican carbon steel griddle) on a gas flame. At home that is most likely a butane canister hot-plate. In camp I'm more likely to use an alcohol burner.

I like to soak a cheap steak in Stubbs BBQ sauce for a half hour or so (maybe with a shot of bourbon mixed in) before grilling, then brush on a little more Stubbs when you flip it. Not really barbeque, but its pretty tasty.

Rastaman, what is the name of that contraption and where can I get one?

Down here in Texas, we have lots of mesquite trees... and cookers take up valuable space in the rig!

I like to soak a cheap steak in Stubbs BBQ sauce for a half hour or so (maybe with a shot of bourbon mixed in) before grilling, then brush on a little more Stubbs when you flip it. Not really barbeque, but its pretty tasty.

Stubbs is awesome stuff.

Also, Allegro is outstanding. A friend even marinated portabello mushrooms in Allegro before we grilled them. Very tasty. :chef:
