Thank you! We built out the van ourselves (with a lot of help from YouTube videos and forum posts). There are a lot of options out there so we spent many, many hours deciding on what best fit our needs.

What mpg are you getting? Also, it doesn't appear at first glance that there are any cooking options, is this so?

We are currently averaging around 16-17 when towing our small aluminum boat. We have a propane double burner campstove that we use. Our preference is to cook outside of the van whenever possible due to heat and odors. If we need to cook indoors, we can use the stove on the countertop (it is 60" x 24" so there is more than ample space to prep and cook). We also have ventilation through the side windows and fan.
