Stuffed Jalepeño suggestions?

Sorry to bring up an old post, but I was experementing with this over the last few weeks. I have used the racks made for barbeques with great success in the past, but wanted something for camping so I ended up using my hot dog sticks to roast the peppers. It worked great.

I saw something the other day that looked enticing. They flattened out a strip of chicken breast, then put a little scoop of sour cream with some diced jalepeno on it, and rolled it up and wrapped a half strip of bacon around it and held it together with a tooth pick. Then they grilled it over coals until al dente. Simple, yet tasty.

Here's another treat for you.

Split a pepper in half, scoop out the seeds, fill it with blue cheese, then put crumbled bacon on top. Make as many as you want, put them on the grill and BBQ until tender and gooey. They are fantastic and do not last long around camp. Next time I'm just popping the top, removing the seeds and stuffing them whole. I'm ordering a grate for the dutch oven and will give that a try. :sombrero: Wahoo!

My concoction was more of a hybrid approach after reading through a number of your tasty recipes. I ended up going with a pablano pepper as the larger size made for a better platform for all my stuffing. Laid some cream cheese in the bottom and topped with garlic, onion, jalapeno and shrimp that I had sauteed. Sprinkled some mixed cheddar on top and of course finished with a half strip of bacon. CostCo has some fantastic raspberry chipotle sauce for dipping:Wow1: Hot damn they were good!!!:chef:

I've been making diablos for quite a while now. Dove,Duck,Shrimp. I used regular cream cheese for the longest time until a buddy turned me onto using pineapple cream cheese. Gives a little sweetness to it all.

This little tool has made things move a little quicker for removing the guts of the pepper:
