Water-tight external connections? (Solar Feed in, etc)

I used a Zamp SAE connector for my solar setup. To keep the cover firmly in place I used a window screen "toggle" an a longer screw in one location. It is just forward of the radio antenna mount in the picture.

I prefer water tight cable glands over clams, then overcoated with roof coating, and MC4 connections to make things removable/modular

I agree. I think the water tight gland approach is simple, cost effective and the most durable. I looked into plugs for a long time and came to the conclusion glands and standard solar plugs were the easiest and most water resistant approach.
