Sorry if this has been covered already but I am getting a build-up of condensation under the cabover. Is this normal? I checked inside and their is no water inside.

You may have a leak at the front edge that allowed moisture between the exterior siding and the outer side of the interior floor. I might put a light between the vehicle and cab over heating the area to help dry it out, when it's cleared up I'd caulk the area to ensure no leaks and see what happens.
